Easy Sheet Pan Veggies & Sausage
Super easy roasted sausage and vegetable platter for a healthy-ish weeknight dinner. I personally use veggie italian sausage (Tofurky is pictured) but you could use whichever style you prefer.
Before getting started, preheat your oven to 425 degrees F / 220 degrees C.
Take each of your peppers and slice them into thin strips. Then take your onion and cut it into into slivers. Place your pepper strips and onion slivers into a single baking pan and mix them up.
Season your vegetables with the paprika, herbes de provence, salt and pepper to taste, and olive oil. Toss the vegetables so they are evenly seasoned. Then place the sausages so they are nestled into the vegetable mixture.
Place the baking pan into the oven at 425 F / 220 C for 30 minutes. When done roasting they'll be ready to eat!
