Description

Wonderful, hearty, unctuous split pea soup. Great for a fall or blustery winter day.

  1. Add 8 cup water to 2 cup split peas and the veggie bouillon cube.  Cook, with lid on. When boiling, reduce heat to maintain soft boiling. 

    You may also add a couple bay leaves. To be removed at the end, before mixing
  2. While split peas are cooking, heat olive oil in skillet, add chopped onion and cubed zucchini. Let fry until golden brown 

  3. Add onion/zucchini to split peas.  continue to cook until split peas are very soft. Total cook time about 1 hr.

    Adding zucchini to the soup will make it very unctuous. This is a trick that is applicable to all mixed soup. I will add zucchini even in winter (off-season) , but this soup without zucchini will still be yummy!
  4. Add salt and pepper to taste

  5. Serve as is, or with sour cream. You can also add some toasts on top, and even some cheese, for cheese lovers.
