  • 1/4 cup Oil
  • 3-5 Waxy Potatoes (+ or - depending on pan size.)
  • 1 Onion
  • 6-9 Eggs (+ or - depending on how many Extra ingredients you add)
  • 2 pinches Salt & Pepper (Season generously!)
  • 1 Cilantro bunch (Chopped)
  • 1-2 Peppers (As mild as Bell Pepper or as hot as Serano, you choose)
  • 1 Veggies (Zucchini, Spinach, Asparagus, etc.)
  • 1 Meat (Bacon, Chorizo, etc.)
  • 1-2 tablespoon Salsa (for a topping)
  1. You can prep everything ahead of time and store it in the fridge for up to 1 day.

    Chop all of your veggies & Cook your meats.
    Then combine everything when you're ready to cook & serve.

    (note: the potatoes tend to get starchy if you chop them ahead of time and put them in the fridge - don't worry - they look funny but taste fine once you pan fry them)
